Summer months seem to be grilling time so let’s start with;

Grilling Tips for Salmon & seafood

  • Thin cuts of salmon tend to dry out quicker than thick cuts.
  • Sprinkling the salmon with salt 2-3 minutes before grilling will help draw out the natural juices.
  • Aspic, cucumber, lemon, dill, and fennel is a classic combination used to fill the cavity of a whole salmon before cooking.
  • Apply basting sauces during the final few minutes of cooking to prevent the salmon from turning black.

So you caught some fresh Trout

The scales on trout are fine. So be sure to clean and descale properly. Meanwhile get the grill hot and lightly oil the grates. So this takes about 15 minutes to prepare, start to finish.

  • 2 trout
  • 1 tbs olive oil , divided
  • 1 pinch coarse sea salt to taste
  • 1pinch black pepper
  • 1/2 lemon, thinly sliced
  • 1/2 sweet onion, thinly sliced
  • 1 clove garlic minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Firstly -Rub each outside of each trout with olive oil sprinkle with sea salt Secondly – sprinkle inside of cavities with salt, black pepper. Finally – Split the lemon, onion slices, and minced garlic into the cavity. Also add in a sprig of rosemary and thyme.

Most importantly TURN THAT GRILL DOWN. So the trout cooks evenly – turn once about 6 to 7 minutes a side. However cook until the skin is browned. As a result the flesh will be flaky and delicious.

During cooking open a bottle of Rose’ Wine, that will top it off.

Teriyaki Grilled Salmon – Seafoods Finest

Directions

So This will take about 55 minutes. So get your glass of wine, a Pinot Noir is my favorite.

¼ cupMadeira Wine
¼ cupLow-Sodium Soy Sauce
1 tablespoonBrown Sugar
1 tablespoonRice Wine Vinegar
1 teaspoonGarlic Powder
½ teaspoonBlack Pepper
⅛ teaspoonGround Ginger
16 ouncesSkinless Salmon Fillet (1 inch thick)
Serving size 4
  1. Combine Madeira Wine, soy sauce, brown sugar, vinegar, garlic powder, pepper and ginger in a shallow dish; and stir well. Add fish; cover, and marinate in refrigerator 30 minutes.

2. So Coat grill racks with cooking spray; place on grill over medium-hot coals (350-400 degrees). Remove fish from marinade; reserve marinade.
3. Place fish on grill rack or in a grill basket coated with cooking spray; grill, uncovered, 5 to 7 minutes on each side or until fish flakes easily when tested with a fork.
4. Transfer fish to a serving platter, and keep warm.
5. Meanwhile place reserved marinade in a small saucepan; bring to a boil. Boil 5 minutes or until marinade becomes thick and syrupy.
6. In conclusion Spoon marinade over fish; serve immediately.

So How long to bake salmon in 375 oven? As a general guide for instance: Fresh, middle fillets–Cook for about 20 minutes at 375. Fresh, tail fillets–Wrap in foil and bake for 12 to 15 minutes at 375. Meanwhile Fresh salmon steaks–Bake at 375 for about 35 to 40 minutes.

Delicious Seafood – Baked Scallops

INGREDIENTS;

  • 20 each buttery round crackers, crushed
  • black pepper to taste
  • 1 teaspoon garlic powder
  • 1 pound sea scallops, rinsed and drained
  • ½ cup butter, melted
  • ¼ cup dry white wine
  • ½ lemon, juiced
  • 1 tablespoon chopped fresh parsley, for garnish

Directions;

1.) So Preheat oven to 350 degrees. Lightly grease a 8×8 baking pan.

2.) Combine crushed crackers, black pepper and garlic powder in a small bowl. Press scallops so they are evenly coated and place in greased baking pan.

3.) In a separate bowl mix the wine, melted butter and lemon juice together and drizzle over the scallops.

4.) After that Bake in preheated oven about 15 minutes and garnish with fresh chopped parsley.

This is a very simple but delicious way to prepare fresh salmon. That is to say using just a few ingredients from your pantry. So From start to clean up this tasty meal will take 20 – 30 min. Above all Pair with a nice white wine – I like a Sauvignon Blanc.

INGREDIENTS

1 tablespoon garlic powder

1 tablespoon dried basil

½ teaspoon salt

4 (6 ounce) salmon

2 tablespoons butter

4 wedge (blank)s lemon wedge

Directions

  • Step 1 – Stir together the garlic powder, basil, and salt in a small bowl; rub in equal amounts onto the salmon fillets.
  • Step 2– Melt the butter in a skillet over medium heat; cook the salmon in the butter until browned and flaky, about 5 minutes per side. Serve each piece of salmon with a lemon wedge.
